On a sunny Sunday like today, I am craving for a filling, refreshing soup.
As boring as this may sound, soup is the perfect meal to me. It is warming, healthy and in this case also detoxifying (thanks to ginger!). This meal has defenitly become one of my favorites and I am currently making it in bulk. Are you searching for a healthy, vegan pho? Then defenitly check out the recipe down below!
3 spoons of Vegan Vegetable Soup base (I use Bio Today)
10 ml of cold pressed Ginger
250 gram of spiraled or julliene cutted Carrot
1 box of cutted Shitake mushrooms
4 teaspoons or Cayenne Pepper
Bio Basil Leaves
1. In a large pot over high heat, add Vegetable soup base and bring water to boil. Add the ginger, cayenne pepper, carrot and mushrooms. Reduce the heat to low and let is simmer till the mushrooms are soft and the veggie “noodles” are al dente.
2. Serve steaming hot in bowls (make sure you use bowls big enough to accommodate all the add-ons!) with toppings to your taste. Enjoy the spicy detoxifying Pho and drink with loads of water.
